Executive Chef James McDonald (also of pacific‘O fame) imbues his New Pacific Cuisine with European and Mediterranean influences, but his menu relies heavily on procuring the finest offerings from local farmers, ranchers, and fishermen. In fact, I‘o Beachfront Dining is so serious about the Farm to Table concept, that they own their own farm here on Maui! Produce is being picked round the clock, and fishermen arrive daily to deliver their catch. Paired with Chef James’ deliciously inventive creations is an indoor-outdoor ambiance both chic and casual. Open for dinner daily and reservations are recommended.
