Tortilla Republic offers a modern take on Mexican cuisine from all regions of Mexico, featuring farm-fresh ingredients and organic products when available with recipes made in house, free of lard and processed additives. Each dish is thoughtfully prepared to showcase the classic Mexican dishes with a contemporary twist, while incorporating unexpected flavors and ingredients. The menu features a mix of small plates and larger entrees including the signature Short Rib Chile Verde—braised prime short rib in spicy tomatillo sauce or the Anhco Chile Rubbed Catch of the Day—fresh Hawaiian fish, ancho chile rub, and herb infused rice. The homemade enchiladas are delicious and served with house rice and black beans. The cocktail program at Tortilla Republic reflects the same seasonal, fresh ingredients and features a large selection of handcrafted margaritas, cocktails and tequilas.
